Description

Our wholesale lamb shank is imported from New Zealand and come packed in cases of 20-24lbs. It is a popular item on the menu of restaurants throught the Islands. This cut of lamb is taken from the lower section of the animal’s legs and can be from the front legs (foreshank) or the back legs (hind shank).

The foreshank of lamb can include part of the shoulder, as well as part of the leg, while the hind shank will include only part of the rear leg. Lamb Shanks tend to have a paper-thin membrane over the cut of the meat. Before cooking, this should be removed to help the meat become more tender.
