This cut of lamb is taken from the lower section of the animal’s legs and can be from the front legs (foreshank) or the back legs (hind shank). The foreshank may include part of the shoulder, as well as part of the leg, while the hind shank will include only part of the rear leg. Lamb Shanks tend to have a paper-thin membrane over the cut of the meat. Before cooking, this should be removed to help the meat become more tender. Best slow-cooked or braised, it goes great over potatoes, noodles, polenta or rice. If you are feeling adventurous you can add your favourite BBQ sauce and chili pepper to your spices and slow cook it.
